2 large Organic Oranges (Navel Oranges are great!)
250g Almonds (ground) OR 250g of Almond Meal
6 good-sized Eggs
200g of Honey
1 tsp. Baking powder
NOTE: I made this in a Thermomix on the actual occasion, but it should work rather well in a food processor or even a blender.
-Place both whole oranges in a saucepan. Cover with water, bring to the boil and simmer for 45mins.
-When these are done, chop up roughly (skin and all) and remove seeds.
-Process/Blend oranges until the pieces are smaller.
-Seperately: mix almonds (meal or ground ) with the baking powder in a large bowl.
-Add the eggs to the almonds. Beat with an electric beater until combined.
-Add the honey. Best until combined.
-Add oranges and to the mix and stir.
-Pour into a lined baking dish, or alternatively into a muffin tray lined with patty pans.
For Cake: approx. 45mins or until springy and when a toothpick can be pushed in and come out clean, not sticky .
For Muffins: (normal sized) approx. 15-20 minutes or when springy.
(small muffins) approx. 10minutes or when springy.
NOTE: Use cream cheese made from yoghurt for a thicker icing.

Homemade Cream Cheese [See Recipe]
Strawberries (approx 6)
-Cut off the outside of the strawberries so that there will be no seeds in the icing. (Do not discard!)
-Place the cream cheese and strawberries in the blender. Blend.
-Remove from blender, and use as icing.
-Garnish with a cube of strawberry on each cupcake, or however you like! (I cut small cubes from the outside layers that I removed from the strawberries for blending).
