Sweet Almond Crackers


You will need:
2 Cups of Almond Meal
Diced Organic Dried Fruit of your choice
Honey (to your taste)
1 Egg
Cinnamon and Nutmeg (to taste)

-Place ingredients into a large bowl.
-Hand mix into a firm doughy ball and wrap in cling wrap.
-Place in fridge for 20 mins.
-Take out. Split mixture into two balls.
-Place sheet of wax paper on bench and place half of the mixture on paper.
-Place more wax paper on top of the mixture.
-Squash mixture down and proceed to roll out flat between two pieces of wax paper.
-When happy with thickness of mixture-not too thin!-gently remove the top piece of paper and proceed to run a sharp knife over mixture to make cuts for appropriate sized crackers. (You don’t have to cut all the way through the mixture as the crackers will break off when cooked)
-Repeat process with 2nd half of mixture!
-Slide your crackers on their piece of wax paper onto your baking tray and place into the oven.
-Cook on slow heat until brown.
-Take out and cool
-When cool snap crackers into their cut portions.

Optional: Dehydrate in a dehydrator for longer shelf storage.
