Chicken & Vegetable Soup


This is a great meal for winter, or when you are sick with the flu. Full of yummy nutrients!

You Will Need:
1 Whole Chicken (Organic or Free Range at worst)
1 or 2 roughly chopped Onions
6 cloves of Garlic diced finely
1 head of Broccoli
1 head of Cauliflower
4 medium sized Carrots sliced
2 Zucchinis sliced
Cubed Pumpkin (how much you use is up to you)
Salt (I like to use Himalayan Salt, Sea Salt or Veggie Salt)

-Boil the whole chicken in a large pot.

-While the chicken is cooking, cut up the vegetables.

-When the meat begins to fall from the bones, remove the chicken from the water and allow to cool.

-Add the onion and garlic to the water.
-Add the pumpkin to the soup.
-Once cool enough to handle without burning yourself, strip the chicken meat from the bones. Discard bones.
-Add the meat and the rest of the vegetables back into the soup. Boil until the vegetables are cooked.

-Add salt to taste.

Note: this meal is suitable for babies, but you may need to purée it for them.
