This recipe will work with any meat in place of chicken. (I have used this recipe with lamb before). It will also work well without any meat at all.
You Will Need:
500g of Organic or Free-Range Chicken Thighs
2 Large Tomatoes
1 Small Brown Onion
2 Large Cloves of Garlic
1cm cube of Fresh Ginger
1/4 of a head of Broccoli
1/4 of a head of Cauliflower
1 Small Zucchini
Spices for Flavour (I use: Paprika, Ground Coriander, Tumeric and Himalayan Salt)
A Small to Medium-sized Casserole Dish
-Place chicken in the dish first.
-Cover with coarsely chopped onion, garlic and ginger.
-Add spices to taste.
-Add diced tomatoes
-Add the remaining vegetables (coarsely chopped).
-Cover with filtered water.
-Place lid on the casserole dish and place dish on a tray (to catch any possible overflow).
-Place in oven and cook at 200 degrees Celsius for 30 minutes. After this, turn the heat down to 150 degrees Celsius and cook for another 2 hours.
-Your Chicken Casserole is done!
Note: I usually blend up my casserole to make it mushy or smooth. I then freeze it like I do any other puréed meals in my freezer safe baby portion containers.
